In keeping with our reputation of extraordinary hospitality and warmth, Spyglass Hill Villa is delighted to present our Island Gourmet Breakfast Mornings. Two mornings of your choice during your stay, a delectable spread of colourful, fresh Caribbean flavours will await you as you arise to the soft rays of sunlight at Spyglass Hill Villa, overlooking the yacht dotted bay. Our in-house Caribbean Chef Erlene, lovingly prepares delightful breakfast fare with the likes of:

• Grandma’s home made porridge flavoured with fresh bay leaf and cinnamon sticks
• Tasty traditional Caribbean saltfish sautéed with shreds of fresh peppers, onions, chives and garlic and served with boiled eggs on a bed of fresh salad. Complemented by the famous Anguillian Johnny cakes (fried or baked as you prefer).
• Eggs any style with bacon and salad
• Herbal “bush” teas made from fresh basil, lemongrass or ginger or any delightful combination
• Fresh breads and pastries
• Fresh pancake with tropical fruit
• Array of fruit and yoghurt
• Any other breakfast fare of your fancy

Chef Erlene says…”When I am cooking I am in my element! I love to express myself creatively by experimenting with a fusion of flavours and colours. I was inspired by my Mom’s cooking…just to see what she created with what she had available, was heartwarming. I ultimately want to operate a Caribbean restaurant bringing together the various styles and flavours from the different islands to create exquisite dining.”
